My cats' moods and emotions?

Much like people, cats are who they are. They each have unique personalities and I've always had the best luck when I've just let them be themselves. It doesn't sound like your black female is overly skittish or anything, since she does seek you out for attention when you're sitting or laying down. It's just her nature to want to have more control over your interaction. Some don't particularly like to be held or bothered unless it's on their terms. One of my seven is very much this way, only two of them really enjoy being picked up and held and only one enjoys having her belly rubbed. As for your attention seeking male, just give him the attention he seeks as you can without ignoring the other two. If he jumps in your lap when you're busy with something else, just place him on the floor gently. He may try again, but he'll back off after one or two times. Honestly, your cats sound normal to me. I don't think I would do anything to try and change their behavior.
